Monday Morning Indugence: A Breakfast of Fruits & Vegetables
David and I have turned a corner for breakfast, and it's a very healthy corner at that. We've started treating ourselves to foods that do a body good first thing in the morning. Our latest challenge has been to see how many vegetables we can fit into breakfast and the results have been stunning! The current favorite has been frittata stuffed with zucchini, spinach, tomatoes, and squash paired with Greek yogurt, honey, and berries. If breakfast makes it to the patio, it's a good day indeed. We watch the bikers fly by on the Greenline and soak up the early morning sun. Happy indulging this Monday morning!
